Exceptional noodles, made from gluten-rich wheat flour and crafted using traditional Shimabara methods. Every stage of production, from the rigorous selection of ingredients to the hand-stretching technique, reflects the region's cultural heritage and demand for quality. The prolonged maturing process gives these noodles a firm texture, allowing them to be prepared ahead of time without losing their taste and texture. Perfect for summer dishes such as cold somen with a light tsuyu sauce and fresh garnishes. In winter, they transform into a comforting nyumen, a hot dish in a savory broth. They are also ideal in salads, or served with meat or stir-fried vegetables.

Based in Unzen, on the Shimabara Peninsula, the company has specialized in the production of handmade noodles since its foundation. Using traditional manufacturing methods, each noodle is carefully crafted, producing up to 260,000 kg of noodles a year. The two-day manufacturing process guarantees noodles with an authentic taste and a firm, smooth texture.
Cook 100g noodles in 800ml boiling water for 2 minutes, stirring gently. Rinse in cold water to remove the starch. You can eat them cold, with a men-tsuyu sauce, or hot in a broth.
Store away from light, heat and moisture.
