Thick wheat noodles with a slightly salty taste, ideal for eating hot. These Udon noodles are prepared using a traditional artisan technique that involves coarsely grinding the grains. The flour is then mixed with water from the melting snow of the Aizu mountains, which is naturally filtered by the mountains. These manufacturing characteristics give these noodles a rich taste that sets them apart from other noodles. The noodles are then masticated, allowing the air contained in the dough to escape while absorbing the ambient humidity, making the noodles more tender once cooked. Very popular in Japan, udon noodles are mainly eaten in winter in hot dishes, with curry sauce or in a hot broth. Their thicker texture than other noodles also makes them ideal for pan-frying with yaki-men sauce, as they won't fall apart. In summer, they can be eaten cold, zaru-udon-style, with tsukemono or raw vegetables.

Located in the town of Minami Aizu, at an altitude of 500 m, which is covered in snow for a third of the year, Naraya Soba makes noodles and miso using peasant techniques, using water from melting snow, as well as coarsely ground cereals to obtain a rich-tasting flour.

The company, which won the 2019 edition of the Fukushima Mantendô competition thanks to its soba, regularly sees its products recommended in press articles or features.

For 1 person: Cook 100g udon in 1 L boiling water for 9 minutes, stirring gently.
