This ponzu sauce is made from the juice of shikuwasa, a small Japanese citrus fruit, and sweet soy sauce to give way to the tangy flavors of the fruit. Very common on the islands, shikuwasa replaces lemon. It is less bitter than other citrus fruits, such as yuzu. This sauce has a fresh, tangy taste that goes perfectly with salads and fish dishes.
