These noodles are made from wheat harvested in the Banshu region, located in Hyogo prefecture, and salt from the town of Ako. They are then hand-stretched using a 600-year-old traditional technique, giving them a smooth yet elastic texture reminiscent of al dente cooking. Although originally designed to be prepared as ramen, with a broth, they can be adapted to a variety of preparations: as a noodle salad, with a men-tsuyu sauce or a Neapolitan sauce. These noodles are exclusively manufactured and distributed by the Hyogo tenobesomen cooperative, which is committed to perpetuating traditions while respecting the environment, as evidenced by the recycled paper packaging.

Founded in 1887 in Tatsuno, Hyogo prefecture, this cooperative specializes in the artisanal production of somen, notably the famous "Ibonoito". It perpetuates traditional know-how while integrating environmentally-friendly practices. The cooperative continues to promote excellence and quality through authentic products and community involvement.
For 1 person: plunge 2 portions of sômen into 1L of boiling water. Cook for 1 to 2mins, stirring gently. Drain and rinse in cold water to stop cooking. Eat immediately!
