These noodles are made from wheat harvested in the Banshu region of Hyogo Prefecture and salt from the city of Ako. They are then hand-stretched using a traditional technique dating back 600 years, giving them a texture that is both smooth and elastic, reminiscent of al dente pasta. Although originally designed to be prepared as ramen with broth, they can be adapted to various dishes: as a noodle salad, with men-tsuyu sauce, or with a Neapolitan sauce. These noodles are exclusively manufactured and distributed by the Hyogo Tenobesomen Cooperative, which is committed to preserving traditions while respecting the environment, as evidenced by the recycled paper packaging.

Founded in 1887 in Tatsuno, Hyogo Prefecture, this cooperative specializes in the artisanal production of somen, particularly the famous "Ibonoito." It preserves traditional expertise while incorporating environmentally friendly practices. The cooperative continues to promote excellence and quality through authentic products and a commitment to the community.
For 1 person: cook 2 portions of sōmen in 1 L of boiling water. Cook for 1 to 2 minutes, stirring gently. Drain them, then rinse them in cold water to stop the cooking process. Eat them immediately!
