A soba shochu with rich buckwheat aromas to be served according to traditional Japanese methods: neat, with ice, or mixed with cold or hot water. The brewery's philosophy is that the natural environment produces the best shochu, and in keeping with tradition, the brewery is located in one of the most picturesque parts of Kyushu. The brewery draws its water from a volcanic spring formed from five different rapids. Unkai translates as "sea of clouds" and owes its name to the autumn view from the top of a hill in the region, made famous by a Japanese emperor who visited it morning, noon, and night. Unkai is a single-distilled shochu.
