These noodles are made using wheat harvested in the Banshu region of Hyogo prefecture and salt from the town of Ako. They are then hand-stretched using a 600-year-old traditional technique, resulting in a smooth yet elastic texture reminiscent of Al-dente cooking. Although they were originally designed to be prepared as ramen, with a broth, they can be adapted to any sauce: as a noodle salad, with a men-tsuyu sauce or a Neapolitan sauce. These noodles are exclusively manufactured and distributed by the tenobesomen cooperative in Hyogo, which is committed to perpetuating traditions while being environmentally friendly, as evidenced by the recycled paper packaging.
