Sanuki udon is a variety of thick noodles from the Kagawa region of Japan. The noodles are made from high-quality wheat flour, water and salt, and have a firm, smooth texture with a mild flavor. These noodles are prepared using the traditional sanuki udon production method. They are kneaded with a large quantity of water, then cut into strips which are left to mature for a long period. Very versatile, they can be served hot or cold in a wide variety of dishes. Sanuki udon noodles can be used to prepare traditional dishes such as kake udon, which is served with a sauce based on dashi, soy sauce and mirin, as well as toppings such as green onions, tempura or kamaboko, a steamed fish paste.

Our tips

For 1 person: plunge 90g of udon into 1L of boiling water. Cook for 12 to 14 minutes, stirring gently. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adjust the cooking time and firmness of the noodles to your taste.

Authentic Udon

As a Japanese woman, these udons are authentic and that's what I eat every day. I like to eat these udons with fish or meat, not forgetting vegetables such as spinach, leeks, carrots or shiitake mushrooms.
