Akio Katayama began making miso as an apprentice after leaving college. Since then, he has devoted his life to studying and researching miso-making techniques. In 2013, he was awarded the title of "Modern Master Craftsman of Kyoto Prefecture".

Based in Uji, Kyoto, Kyoto Yamasan, founded in 1995, has set itself the mission of making traditional Japanese cuisine accessible through quality food products that are both healthy and additive-free, such as miso, soy sauce and tea. The company favors a "three-win" approach, integrating the values of respect for producers, customers and the company itself. In 2014, it began exporting abroad, and is now present in over 60 countries.

The company also has a restaurant and café in the heart of Uji, working with organic and local produce.
