Temaki bento recipe
A bento that mixes Japanese vibes with raw freshness. Like a disassembled temaki to assemble yourself, with soft rice, fresh salmon, melting avocado and peppy toppings. It's simple, clean and can be eaten in the sunshine or behind a computer. Enjoy it without hurrying.

Ingredients
- 100 g white rice
- 1 raw salmon fillet (sashimi quality)
- ½ avocado
- ½ cucumber
- 4 sheets temaki nori
- 1 small handful of wasabi microgreens (not available in stores)
- 1 tsp lemon juice
- Soy sauce
Directions
- Rinse rice in cold water until clear. Cook in a saucepan or pressure cooker. Let cool to room temperature.
- Slice salmon. Slice avocado. Cut cucumber into thin sticks. Sprinkle avocado with lemon juice. Gently rinse wasabi microfoam.
- Place rice in one compartment of the box. Add salmon, avocado and microfoam on top. Place cucumber sticks in another compartment. Add nori leaves separately, ready to be rolled or garnished at mealtime.
- Serve with soy sauce on the side.
