Ingredients

  • 60 ml of cold red shiso infusion
  • - 30 ml yuzu juice
  • - 15 ml agave syrup
  • - Sparkling water or ginger beer to top up
  • - A few ice cubes
  • - Garnish: shiso leaf, lemon zest, or crushed pink peppercorns

Directions

  1. Prepare the shiso infusion: steep 3–4 leaves in 150 ml of hot water for 5 minutes, then leave to cool completely.
  2. In a shaker (or large glass), mix the infusion, yuzu juice, and agave syrup.
  3. Add ice cubes and shake vigorously.
  4. Pour into a cocktail glass filled with ice.
  5. Add sparkling water or ginger beer.
  6. Garnish with a shiso leaf or lemon zest.
