Ingredients

  • 400 g ground chicken
  • 1 egg
  • 1 spring onion, thinly sliced
  • 2 to 3 tablespoons panko (Japanese breadcrumbs)
  • 1 small piece of grated ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tsp. roasted sesame oil
  • Salt and pepper
  • For the homemade yakitori sauce :
  • 2 tbsp. soy sauce
  • 2 tablespoons mirin
  • 2 tbsp. sake
  • 1 tablespoon sugar

Directions

  1. In a large bowl, mix the ground chicken with the egg, spring onion, ginger, panko, soy sauce, mirin and sesame oil. Season with a pinch of salt and pepper.
  2. Shape into 2-3 cm balls and thread onto wooden skewers (3-4 balls per skewer).
  3. In a hot frying pan with a drizzle of oil, brown the brochettes over medium heat until golden brown on all sides.
  4. Mix sauce ingredients in a small bowl. Pour into pan and reduce for a few minutes, until meatballs are coated and lightly caramelized.
  5. Serve immediately, sprinkled with toasted sesame seeds and accompanied by steamed rice or crunchy coleslaw.
