Ingredients
- 400 g ground chicken
- 1 egg
- 1 spring onion, thinly sliced
- 2 to 3 tablespoons panko (Japanese breadcrumbs)
- 1 small piece of grated ginger
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 tsp. roasted sesame oil
- Salt and pepper
- For the homemade yakitori sauce :
- 2 tbsp. soy sauce
- 2 tablespoons mirin
- 2 tbsp. sake
- 1 tablespoon sugar
Directions
- In a large bowl, mix the ground chicken with the egg, spring onion, ginger, panko, soy sauce, mirin and sesame oil. Season with a pinch of salt and pepper.
- Shape into 2-3 cm balls and thread onto wooden skewers (3-4 balls per skewer).
- In a hot frying pan with a drizzle of oil, brown the brochettes over medium heat until golden brown on all sides.
- Mix sauce ingredients in a small bowl. Pour into pan and reduce for a few minutes, until meatballs are coated and lightly caramelized.
- Serve immediately, sprinkled with toasted sesame seeds and accompanied by steamed rice or crunchy coleslaw.
