Ingredients
- 200 g rice
- 160 g beef
- 70 g vermicelli
- 74 g white onion
- 2 hard-boiled eggs
- 20 g snow peas
- 30 g sake
- 30 g mirin
- 60 g soy sauce
- 20 g sugar
- 150 g water
Directions
- Wash the rice 2 or 3 times until the water runs clear.
- Cook the rice for about 10 minutes in a pressure cooker or covered saucepan. Add as much water as rice.
- Once all the water has evaporated, your rice is ready. Set aside.
- Soak the vermicelli in hot water for about 1 hour, then take them out before they are completely soft and drain.
- To cook hard-boiled eggs, bring water to the boil. Carefully plunge the eggs - preferably with a skimmer - into the boiling water and leave to simmer for 11 minutes. Immediately plunge them into cold water to stop the cooking process.
- In the meantime, slice your beef in the direction of the grain, into thin strips.
- Chop the onions.
- Prepare the sauce. Place sake and mirin in a saucepan, heat sake and mirin until boiling and stir in soy sauce, sugar and water. Set aside.
- Brown the meat in 2.5 tablespoons of oil. When the meat has browned, add the vermicelli and onion. Add the sauce and reduce for about 2 minutes. Be sure to keep a little sauce on hand to maintain seasoning.
- In 2 individual bowls, add 100 g of rice, and divide the vermicelli, meat and onions evenly over the top.
- Decorate with a halved egg and snow peas. Enjoy!
