Ebi Fry is a classic Japanese dish consisting of large, crispy shrimp, breaded Japanese-style and fried to perfection. Served with homemade tartar sauce or lemon, these golden shrimp are perfect for a tasty and elegant meal.
Ingredients
- 12 large raw shrimp, peeled and deveined

1 teaspoon salt
- 1/2 teaspoon pepper
-
50 g flour
- 1 beaten egg

100 g panko (Japanese breadcrumbs)
- Vegetable oil for frying
- Lemon and tartar sauce to serve
Instructions
Prepare the shrimp
Rinse and dry the shrimp with paper towels. Season with salt and pepper.
Bread the shrimp
- Roll each shrimp in flour, shaking off any excess.
- Dip in the beaten egg.
- Coat with panko until the shrimp is well covered.
Fry
- Heat the oil to 170–180°C in a saucepan or deep fryer.
- Fry the shrimp for 2–3 minutes on each side until golden brown and crispy.
- Drain on paper towels.
Serve
Serve with lemon wedges and tartar sauce. Serve immediately to enjoy the crispiness.
Recipe notes
For an even crispier result, let the breaded shrimp rest for 5 minutes before frying.
Japanese panko gives a light and airy texture, so don't substitute it with regular breadcrumbs.
You can also serve Ebi Fry with Japanese rice or a fresh salad for a complete meal.
