Recipe Goma dare - Sesame sauce
Creamy and fragrant, this traditional goma dare sauce combines the richness of sesame with the sweetness of mirin and the depth of soy sauce. Perfect with shabu-shabu, cold salads or soba noodles, it offers a velvety texture enhanced by a touch of sesame oil and toasted seeds. An essential staple of Japanese cuisine, simple to prepare and full of umami.

Ingredients
- 3 tablespoons Japanese white sesame paste (or tahini)
- 2 tbsp. soy sauce
- 1 tablespoon sugar (or mirin)
- 1 tablespoon rice vinegar
- 1 tablespoon water (or more, depending on desired consistency)
- 1 teaspoon sesame oil
- 1 tsp white miso for extra depth (optional)
- Toasted sesame seeds for the finishing touch
Directions
- In a small bowl, mix together the sesame paste, soy sauce, sugar (or mirin) and rice vinegar. Use a whisk or wooden spoon.
- Gradually add the water until the sauce is smooth but still glossy (neither too liquid nor too thick).
- Add the toasted sesame oil last. It adds a subtle aromatic touch and warms up the sauce with its roasted notes.
- Add a spoonful of white miso for a more intense umami flavor. If you prefer a warm sauce, heat it very gently over low heat without boiling.
- Pour into a small bowl and sprinkle with toasted sesame seeds just before serving. This sauce is a perfect accompaniment to salads, cold meats, steamed vegetables or soba noodles.
