Recipe Goma dare - Sesame sauce

Creamy and fragrant, this traditional goma dare sauce combines the richness of sesame with the sweetness of mirin and the depth of soy sauce. Perfect with shabu-shabu, cold salads or soba noodles, it offers a velvety texture enhanced by a touch of sesame oil and toasted seeds. Ingredients

  • 3 tablespoons Japanese white sesame paste (or tahini)
  • 2 tbsp. soy sauce
  • 1 tablespoon sugar (or mirin)
  • 1 tablespoon rice vinegar
  • 1 tablespoon water (or more, depending on desired consistency)
  • 1 teaspoon sesame oil
  • 1 tsp white miso for extra depth (optional)
  • Toasted sesame seeds for the finishing touch

Directions

  1. In a small bowl, mix together the sesame paste, soy sauce, sugar (or mirin) and rice vinegar. Use a whisk or wooden spoon.
  2. Gradually add the water until the sauce is smooth but still glossy (neither too liquid nor too thick).
  3. Add the toasted sesame oil last. It adds a subtle aromatic touch and warms up the sauce with its roasted notes.
  4. Add a spoonful of white miso for a more intense umami flavor. If you prefer a warm sauce, heat it very gently over low heat without boiling.
  5. Pour into a small bowl and sprinkle with toasted sesame seeds just before serving. This sauce is a perfect accompaniment to salads, cold meats, steamed vegetables or soba noodles.
