Tai goma recipe

Ingredients

  • 2 sea bream fillets (approx. 120-150 g each)
  • 2 tbsp white sesame seeds
  • 1 tablespoon black sesame seeds (optional, for color)
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin (sweet rice wine)
  • 1 teaspoon sesame oil
  • Salt and pepper
  • 1 tsp. vegetable oil for cooking

Directions

  1. Lightly salt and pepper the sea bream fillets.
  2. Mix the white and black sesame seeds on a plate. Gently press each fillet into the seeds to coat evenly.
  3. Heat the vegetable oil in a non-stick frying pan over medium heat. Place the fillets skin side down and cook for 4-5 minutes, until the skin is golden and crispy. Turn the fillets over and cook for a further 3-4 minutes.
  4. Mix soy sauce, mirin and sesame oil. Pour this mixture over the fillets at the end of cooking and allow to caramelize slightly.
  5. Serve immediately with Japanese rice or steamed vegetables.
