Ingredients
- 400 g ground chicken
- 1 egg
- 1 spring onion, thinly sliced

2 to 3 tablespoons panko (Japanese breadcrumbs)

1 small piece of grated ginger

1 tablespoon soy sauce
-
1 tablespoon mirin
-
1 tsp. roasted sesame oil
- Salt and pepper
- For the homemade yakitori sauce :
-
2 tbsp. soy sauce
-
2 tablespoons mirin
-
2 tbsp. sake
-
1 tablespoon sugar
Instructions
- In a large bowl, mix the ground chicken with the egg, spring onion, ginger, panko, soy sauce, mirin and sesame oil. Season with a pinch of salt and pepper.
- Shape into 2-3 cm balls and thread onto wooden skewers (3-4 balls per skewer).
- In a hot frying pan with a drizzle of oil, brown the brochettes over medium heat until golden brown on all sides.
- Mix sauce ingredients in a small bowl. Pour into pan and reduce for a few minutes, until meatballs are coated and lightly caramelized.
- Serve immediately, sprinkled with toasted sesame seeds and accompanied by steamed rice or crunchy coleslaw.
Recipe notes
For an even tastier result, you can :
Add a few toasted sesame seeds or a drizzle of sesame oil to the skewers just before serving to intensify the flavor.
To vary the flavor, add a little mirin or extra soy sauce to the sauce for a sweeter, saltier taste.
For a touch of freshness, sprinkle with finely chopped chives or spring onions before serving.
Serving suggestion: Serve your tsukunes hot, straight from the pan or oven, with a bowl of Japanese rice to enjoy the contrast between the juicy meat and the flavorful sauce.
