Ingredients

  • 40 cl full cream
  • 10 cl milk (or soy milk for a lighter version)
  • 2 sheets gelatin (or 2 g agar-agar for a vegetarian version)
  • 50 g sugar
  • 2 teaspoons culinary matcha green tea
  • (Optional): brown sugar sirup, kinako or red fruit for garnish

Directions

  1. Soften the gelatine in a bowl of cold water for 5 to 10 minutes.
  2. In a saucepan, heat the cream, milk and sugar until simmering.
  3. Remove from the heat, add the gelatine (or agar-agar, previously boiled for 30 sec) and whisk to dissolve.
  4. Sift in the matcha tea and gradually stir in, whisking vigorously to avoid lumps.
  5. Pour the mixture into 4 verrines and leave to cool before placing in the fridge for at least 4 hours.
  6. Just before serving, add a drizzle of brown sugar sirup, a pinch of kinako or some fresh fruit for a gourmet contrast.
