Ingredients
- 40 cl full cream
- 10 cl milk (or soy milk for a lighter version)
- 2 sheets gelatin (or 2 g agar-agar for a vegetarian version)
- 50 g sugar
- 2 teaspoons culinary matcha green tea
- (Optional): brown sugar sirup, kinako or red fruit for garnish
Directions
- Soften the gelatine in a bowl of cold water for 5 to 10 minutes.
- In a saucepan, heat the cream, milk and sugar until simmering.
- Remove from the heat, add the gelatine (or agar-agar, previously boiled for 30 sec) and whisk to dissolve.
- Sift in the matcha tea and gradually stir in, whisking vigorously to avoid lumps.
- Pour the mixture into 4 verrines and leave to cool before placing in the fridge for at least 4 hours.
- Just before serving, add a drizzle of brown sugar sirup, a pinch of kinako or some fresh fruit for a gourmet contrast.
