Teriyaki salmon is a popular dish in Japan. Discover our salmon teriyaki recipe, where grilled salmon is combined with a homemade teriyaki sauce.
Teriyaki sauce is a typically Japanese sweet and savory sauce. It is thick enough to coat each piece of salmon.
This recipe gives the salmon a tender texture and rich flavor. Served on a bed of plain rice, teriyaki salmon offers a culinary experience that will delight lovers of balanced, delicate flavors.

4 fresh salmon steaks
- 1 tbsp. vegetable oil

4 tbsp. soy sauce

4 tbsp. mirin

2 tbsp. cooking sake
-
2 tbsp. sugar
- 1 teaspoon sesame seeds (optional, for garnish)
- Finely chopped green onions (for garnish)
For the teriyaki sauce :
Instructions
In a small bowl, combine the soy sauce, mirin, sake and sugar. Stir well until the sugar has completely dissolved. The result is a slightly sweet and salty sauce, ready to be used to marinate the salmon.
Place the salmon steaks in a shallow dish, spacing them evenly. Pour half the teriyaki sauce over the steaks, coating well. Cover and marinate in the refrigerator for 15 to 20 minutes.
Heat the vegetable oil (or sesame oil) in a frying pan over medium heat. Once the oil is hot, drain the salmon steaks to remove any excess marinade. Place the salmon steaks in the pan, skin side down. Cook for 3 to 4 minutes, until the skin is golden-brown and slightly crispy. Gently turn over and cook for a further 2-3 minutes, until the salmon is cooked through, but still tender and juicy.
Once the salmon is cooked, pour the reserved marinade into the pan. Simmer gently over medium heat, basting the steaks with the sauce to coat well. The sauce will begin to thicken and caramelize, becoming slightly syrupy.
Remove the salmon steaks from the pan and arrange on serving plates. Drizzle with the reduced sauce and serve immediately. This dish is ideal for a bento or a quick but tasty dinner. Serve with Japanese white rice and sautéed vegetables for a balanced and complete meal.

- Arrange the salmon steaks on plates, drizzle with the reduced teriyaki sauce and garnish with sesame seeds and green onions.
- For a glossier, smoother sauce, add a dab of butter at the end of cooking. You can also substitute sesame oil for vegetable oil. Sesame oil brings a distinctive flavor to cooking, which can enrich and intensify the taste of dishes.
The term "teriyaki" comes from two Japanese words: "teri", meaning "to shine" or "lustre", and "yaki", referring to grilling or pan-frying. Teriyaki sauce, used in many recipes, adds a sweet and savory sheen, perfect for coating salmon.
