Ingredients
- 1 packet of KAYANOYA Original mushroom bouillon powder
- 150 g ground pork
- 150 g ground beef
- 1 tomato
- 1 onion
- 1 carrot
- 1 tablespoon chopped garlic
- 1 tablespoon minced ginger
- 1 onsen egg (boiled egg)
- Chopped green onions and white sesame seeds (to taste)
- 5 g cumin powder
- 10 g curry powder
- 5 g smoked paprika
- 15 g KAYANOYA mixed miso paste (or red miso)
- 1 tablespoon soy sauce
- 100 ml hot water
Directions
- Open the packaging of KAYANOYA's original mushroom bouillon powder and store the powder in a small container.
- Finely chop the onion and carrot, or blend in a blender. Peel and seed tomatoes, then dice.
- Mix miso, hot water and soy sauce and set aside.
- Heat a little olive oil in a large saucepan over medium heat. Add the cumin powder, minced garlic and minced ginger, and sauté until fragrant. Then add the minced onion and carrot and cook until fragrant.
- Add the ground pork and ground beef, stirring until the meat changes color. Then add the curry powder, smoked paprika and basic powder for mushroom dashi soup. Add the diced tomatoes and miso mixture, mixing lightly.
- Reduce heat to low and simmer for about 10 minutes. Turn off the heat and leave to stand for a further 10 minutes. If you wish, cook the curry longer until it is drier. Season with salt.
- Serve the curry over white rice, garnished with chopped shallots and white sesame seeds. You can also add onsen egg for extra flavor. Enjoy!
