Ingredients
- 100 g wheat flour
- 75 g buckwheat flour (optional for added flavor)
- 4 tablespoons olive oil or 50 g cold butter
- 1 tablespoon of ground almonds
- 6 cl of water
- 1 pinch salt
- 1 egg
- 1 L milk (cow's milk, oat milk, or rice milk for vegan version)
- 4 eggs
- 50 to 100 g sugar (according to your taste)
- 100 g cornstarch
- 1 tablespoon of high-quality matcha (culinary grade)
- 1 pinch of vanilla powder or 1 vanilla pod
Directions
- In a large bowl, combine the flours, almond powder, and salt.
- Add the oil or butter and mix until you obtain a sandy texture.
- Gradually add the water, then the egg, until a smooth dough forms.
- Roll out the dough in a pie dish and refrigerate for 15 minutes.
- In a small cup, mix the matcha with a little hot water to obtain a smooth paste without lumps.
- Bring the milk to a boil with the vanilla.
- Beat the eggs in a separate bowl.
- Mix the cornstarch with the sugar and matcha.
- Add this mixture to the beaten eggs, then slowly add the hot milk while whisking to obtain a smooth mixture.
- Pour the flan mixture onto the shortcrust pastry.
- Bake in a preheated oven at 200°C for 40 minutes.
- Check whether it is cooked by inserting the blade of a knife: it should come out clean.
- Let the flan cool to room temperature, then place it in the refrigerator for at least 2 hours.
