Ingredients

  • 145 g powdered sugar
  • 53 g raw almond powder
  • 50 g flour 45 50 g flour T45 45 45 g flour
  • 2 tsp. matcha tea
  • ½ tsp. baking powder
  • 1 g salt
  • 80 g butter
  • 20 g honey
  • 150 g egg whites (4 to 5 eggs)

Directions

  1. Preheat oven to 170°C.
  2. Beat the egg whites until stiff and refrigerate.
  3. Mix flour, sugar, baking powder, almond powder and green tea together.
  4. Gradually add the egg whites (at room temperature) to the mixture.
  5. Heat the butter and honey to 50°C, then add to the mixture. Leave in a cool place overnight.
  6. Butter and flour the financier molds. Pour the batter into the molds up to ¾ full and bake at 150°C for 5 minutes. Turn off the oven and cook for a further 5 minutes.
  7. Leave to cool, unmould and enjoy your matcha financiers!
